The Truffle

The truffle is a hypogeous fungus (subterranean) that is associated with the roots of some forest species, especially of the genus Quercus, establishing a symbiosis (mycorrhiza) beneficial for both.
They are fructifications underground globose, belonging to the genus Tuber.
In Europe, approximately 21 species of the Tuber genus have been found, although not all are edible. In Spain the spice of greatest commercial value is the black truffle (Tuber melanosporum).
